Colourful superfood porridge

A colorful way to start the day. The porridge is packed with healthy ingredients. I use pitaya powder for the beautiful color. I love to experiment with the colors from superfoods. You can make this porridge as overnight porridge or as a warm porridge. 

Breakfast for one

  • 50 g/1.7 oz steel-cut oats
  • 2 tbsp fine coconut flakes
  • 1 tbsp chiafrø
  • 1 tsp pitaya powder
  • ½ tsp vanilla extract
  • A pinch of himalaya salt
  • 2-3 dl/0.8-1.2 cups  of nut milk
  • A bit of lime juice
  • Fresh berries for serving

Cold overnight porridge: Mix together all the dry ingredients. Add 2 dl/0.8 cups nut milk and a bit of lime juice. Mix together and leave the porridge in a sealed container in the fridge overnight. Serve in the morning with fresh berries.

Varm porridge: Mix together all the dry ingredients. Add 3 dl/1.2 cups nut milk and a bit of lime juice. Bring the porridge to boil while stirring in 3-4 minutes. Serve the warm porridge with fresh berries.
